In Korea, raw fish or other sea gifts are called "hwe" (회). That is, clarification is required specifically for raw meat (see above) ("yuk" - "meat").
Raw fish is just raw fish: no seasonings "in"; only "with". Marinade, fermentation - this is not for hwe, everything ferments in the stomach!

However, fresh whale meat, due to the reasons stated above, has now become difficult to obtain. So, as a rule, it is still steamed or boiled.
In Jeolla Province, you can find chicken hwee. In other regions they are not familiar with this type of raw meat. Usually the visitor orders hwe while the chicken is still alive, which, immediately after ordering, is (unfortunately) cut off with its head and butchered.
Usually chicken breast is used for this unique delicacy; but also parts such as liver, stomach and even chicken legs are used for this kind of sashimi.
